I am restoring a Toro powered Revcon Motorhome with only 25,000 original miles.

Visually everything is in pretty good shape. It has not run in a couple years.
I want to put together a list of the soft tissue items that will break down over time, regardless of mileage.
Obviously everything I can see on the engine; hoses, belts etc.
But more importantly, the stuff inside the drive train that will fail without warning and ruin my day.

You should be aware of this company: www.appliedgmc.com
They specialize in GMC motor homes and are extremely knowledgeable and helpful with the Toronado drivetrain.
These engines and transmissions are extremely durable. If I were you, I'd flush and refill the transmission and drive it. If it shifts in all gears like it should, I wouldn't mess with it any more than that.
Make sure your cv boots are soft and not torn.
They specialize in GMC motor homes and are extremely knowledgeable and helpful with the Toronado drivetrain.

I've been on the GMC board for years. Lots of really great knowledge there and very generous people, including Jim K from Applied GMC.

What to replace? - 1972 only 25,000 miles
I would get the trans apart and throw in new rubber clutch piston seals,
$30 if you can do it yourself. At that mileage I would expect to just reuse
all the hard parts. The rear chain cover is terrible for leaking oil, but
throw away the cork gasket and glue it back for a cure. This VALCO
has been used.
Sealed roller bearings will fail after the grease dries out. I have replaced
several A/C compressor clutch bearings that failed on newer/less miles
that that. Simple with a couple tools, beats seeing smoke coming out
from under the hood several states from home like my 79. At least the
front in the alternator as well, at least grease the rear. Get any belt idlers.
I don't know what kind of wheel bearings you have, but make sure they
get some new grease. Bruce Roe
