I am restoring a 1968 (rhd) Toronado in Melbourne Australia. I am wondering what is involved in adding Temperature, Oil and Ammeter gauges instead of relying on standard warning lights.

Same as any other vehicle. Buy the standard 3 gauge, under dash setup by Sun and you'll be in business in a weekend afternoon of work.
You can get them anywhere like JC Whitney or Summit Racing.
